Lasagna-Stuffed Peppers

These lasagna-stuffed peppers are a quicker (and cuter) version of a full lasagna casserole. If you have some meat sauce ready to go, these come together in minutes and take only 20 minutes in the oven!

Ingredients

  • 2 red peppers
  • 2 cups meat sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Slice your peppers in half and place in a casserole dish.

  2. Put a large spoon (about 1/2 cup) of meat sauce in each pepper half.

  3. Put a large dollop (about 1/4 cup) of ricotta cheese on top of the meat sauce.

  4. Sprinkle each pepper half with 1/4 cup of mozzarella cheese.

  5. Bake at 350 for 20 minutes.

  6. Turn the oven to broil for 2 minutes to brown the cheese.
