Vanilla Donuts with Toasted Coconut Glaze

Ingredients

Vanilla Donuts:

  • 1 1/3 cup almond flour
  • 1/4 cup powdered sweetener (e.g. Lakanto Powdered Monk Fruit Sweetener)
  • 1 tsp baking powder
  • 1/2 tbsp gelatin
  • 2 eggs
  • 3 tbsp butter melted and cooled
  • 1 tsp vanilla

Toasted Coconut Glaze:

  • 1 cup unsweetened shredded coconut
  • 1 tbsp powdered sweetener (e.g. Lakanto Powdered Monk Fruit Sweetener)

Instructions

For Vanilla Donuts:

  1. Preheat oven to 350 degrees.

  2. Combine dry ingredients in a bowl and mix thoroughly.

  3. Add eggs, vanilla and melted butter (that has cooled) and mix gently by hand just until combined. 

  4. Use a spatula to fill the cavities of a donut pan about halfway full. 

  5. Bake at 350 for about 15 minutes.

For Toasted Coconut Glaze:

  1. Toast coconut in the 350 degree oven for 5 minutes until it is golden brown.

  2. Add toasted coconut and sweetener to your food processor or blender and whiz it up for a few minutes, scraping the sides a few times until it turns into a smooth, thick paste. 

To Assemble Donuts:

  1. I like to just use a spoon to drizzle the toasted coconut glaze onto the donuts. It hardens as it cools so quickly add your pink coconut before it sets!
