Lasagna-Stuffed Peppers
These lasagna-stuffed peppers are a quicker (and cuter) version of a full lasagna casserole. If you have some meat sauce ready to go, these come together in minutes and take only 20 minutes in the oven! You could make this recipe using the small little sweet peppers and serve it as an appetizer or a late night snack.
Step 1: Make Your Meat Sauce
I make my meat sauce with ground beef, onions and garlic. Just brown it all up in the pan over medium heat and stir in your tomato sauce. If you feel like cooking you should try my Roasted Garlic Tomato Sauce. It does take a bit of time but it is worth the effort! It starts with roasted garlic and roasted tomatoes (which take about 30 minutes in the oven) and then you combine everything in a pan and let it simmer on the stove for another 30 minutes until it gets thick and all of the flavours concentrate. I promise you it’s worth the effort!
Step 2: Assemble Your Lasagna-Stuffed Peppers
This step is the fun part! Cut your peppers in half, fill with meat sauce, then ricotta cheese, then top with mozzarella cheese.
When I make a whole lasagna casserole I usually add “noodles”, which are thinly sliced vegetables (either butternut squash, eggplant or zucchini). But for these mini lasagna-stuffed peppers, I don’t bother. It is just the good stuff!
Step 3: Bake Your Lasagna-Stuffed Peppers
Bake at 350 for 20 minutes and then put them under the broiler for 2 minutes or so to brown the cheese. Quick and easy lasagna! (And so cute!)
Lasagna-Stuffed Peppers Tips and Variations:
- Instead of ground beef, try ground turkey or spicy Italian sausage.
- Add some chopped spinach or kale (fresh or frozen) in with the ricotta cheese.
- Sprinkle some Italian seasoning (or just oregano) on top.
- Use small sweet peppers and make these as an appetizer.

Lasagna-Stuffed Peppers
Ingredients
- 2 red peppers
- 2 cups meat sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions

Slice your peppers in half and place in a casserole dish.

Put a large spoon (about 1/2 cup) of meat sauce in each pepper half.

Put a large dollop (about 1/4 cup) of ricotta cheese on top of the meat sauce.

Sprinkle each pepper half with 1/4 cup of mozzarella cheese.

Bake at 350 for 20 minutes.

Turn the oven to broil for 2 minutes to brown the cheese.
