I’m Erin and I live in Oakville, Ontario, Canada with my husband Scott and our happy little 2-year old, Gordie. Most days you can find me in the kitchen whipping up some healthy meals and treats for my family. I love developing my own low-carb, gluten-free and paleo recipes that the whole family enjoys. My recipes are mostly desserts and comfort foods, which are our favourites. When I’m not busy in the kitchen, you can catch me outside going for hikes with Gordie and splashing in the lake at our family cottage. The cottage has always been my favourite place on earth and I have lots of great memories of growing up on the lake with my sisters. We loved watching the Snapping Turtles lay their eggs on the beach, catching tadpoles and gartersnakes and going fishing for sunfish and Rock Bass in the paddleboat. It had a big influence on me and helped me choose my career as an Ecologist. I work at an engineering firm, conducting Species at Risk studies, writing impact assessment reports and getting environmental permits for development projects like highway widenings and bridge replacements.
I created this website so I can share my recipes with others who are trying to lose weight and maintain their losses. I have developed a real interest in creating healthy recipes that are delicious and don’t make me feel deprived. I think that was one of the secrets to my success. I love the fact that I can have pancakes with strawberry compote and molten lava chocolate cake and still lose weight! That is what makes me confident that continue to eat this way and keep the weight off for the rest of my life.
