Instant Pot Strawberry Compote

What is strawberry compote? Strawberry compote is basically pie filling, but compote is a better name because it has so many more uses than just pie filling. In addition to using it for pies and tarts, I also use it to top cheesecake, ice cream, pavlova, brie, yogurt, pound cake, tea biscuits, muffins, banana bread, pancakes, french toast… the list goes on forever. Everything is better with compote!

Only 3 Ingredients!

This recipe has only 3 ingredients: strawberries, sweetener and a weird, but magical ingredient called glucommanan powder.

Magic Ingredient: Glucommanan Powder

Glucommanan powder is a water soluble fiber made from the roots of the konjac plant. It is magical because it is very good at turning water to gel. If you see it in the grocery store or pharmacy, it’s worth picking up so you have a healthy thickener to use for sauces, puddings, gravy, etc.

If you don’t have any glucommanan powder, gelatin or ground chia seeds work the same way and will gel up your compote just fine.

Sweetener Options

I make my Strawberry Compote with either monk fruit sweetener or erythritol (Swerve). You could also use xylitol or any other sweetener that measures about the same as sugar.

Step 1: Strawberry Puree

The first step in this recipe for Strawberry Compote is to create a strawberry puree, with a few strawberries, the sweetener and the gelling agent. I used my food processor for this, but you could also use your blender.

Step 2: Let the Instant Pot do the work!

The next step is just dumping everything in the Instant Pot and letting it cook for 5 minutes to turn into a delicious thick, sweet jam. If you don’t have an Instant Pot, you can cook it on the stovetop and bring it to a boil, stirring constantly. Let it boil for 3-5 minutes until it is a good consistency. You want some strawberry chunks to remain so don’t overcook it.

Strawberry Compote Tips and Variations

  • The best way to make delicious strawberry compote is to use delicious strawberries. In the winter, I use frozen strawberries as they have better flavour.
  • In the summer you can add 2 cups of chopped rhubarb for a delicious rhubarb-strawberry compote
  • You can make a mixed berry compote by using 2 pounds of mixed berries. I like using raspberries, blackberries and blueberries.
  • For a bit of extra flavour, you can add any of the following: 1 teaspoon lemon zest, 1 tablespoon cinnamon, a bunch of fresh basil leaves, a bunch of fresh mint leaves.

Ingredients

  • 2 pounds strawberries hulled (fresh or frozen)
  • 1/2- 1 cup sweetener depending on how sweet your strawberries are
  • 1 tsp gelatin or ground chia seeds

Instructions

  1. Remove stems from strawberries and cut into quarters.
  2. Puree about 1 cup strawberries in food processor along with sweetener and gelatin or ground chia seeds.

  3. Put strawberries and strawberry puree into Instant Pot and cook on manual for 5 minutes.

Recipe Notes

If you don't have an Instant Pot, first you should get one. But in the meantime, you can make this strawberry compote on the stovetop too. Put strawberries and strawberry puree in a pot and bring to a boil over medium/high heat and bring to a boil. Boil for 3-5 minutes stirring constantly. You want some of the strawberries to break down and some to remain whole, so don't boil for too long.
