Toasted Coconut Butter Candy: Kid-Friendly Recipe!

If you haven’t tried toasted coconut butter candy, you are missing out. It is buttery and smooth and rich like fudge. And it melts in your mouth just the right amount. It is perfection, second only to chocolate.

I’m a daily snacker. Around 3 or 4pm is the hungriest I am all day. If I could have supper at that time, that would be the best. Like an 80 year old, I know. But since that doesn’t really work for us, I need to find myself a snack at that time every day. I find the best, most filling snacks are ones with some healthy fats and not much sugar. Enter toasted coconut butter candy!

If the coconut butter is hard, soften it in the microwave for 20 seconds or so and then stir in the stevia drops. Pour into some molds (these adorable dinosaur molds if they are for your 2 year old!) and put in the fridge for an hour or so to set. That’s it!

Toasted Coconut Butter Candy: Recipe Tips and Variations

  • Drizzle or dip these in chocolate (or half fill the molds with coconut butter and then fill the rest with chocolate)
  • Mix in some shredded coconut or chopped nuts
  • Try different flavours of stevia
