Coconut Milk Smoothie Bowl: Almost Too Pretty to Eat!

Smoothies are pretty good. But smoothie bowls… with toppings?!! Killer. It’s the difference between plain ice cream and an ice cream sundae with chocolate chips and hot fudge. They are just next level. I am obsessed with them.

What are Smoothie Bowls?

I first learned about smoothie bowls on instagram, where they are a trendy snack right now, I’m guessing because they are so pretty! They are just smoothies that are thick and rich and creamy so you eat them with a spoon instead of drinking them. And you add lots of toppings, which makes them fun to eat. Once I tried one, there was no going back. I have them for breakfast and for dessert. (You can add chocolate chips or brownie chunks and you will forget all about the handful of kale in there!)

Vitamix Blenders- Worth The Investment?

I make my smoothie bowls in my Vitamix blender. (Canadian link here). You can use a regular blender too, it just might not get the spinach or kale quite as smooth. You could just use ingredients that are easier for your blender to handle, like avocado. If you have heard of these super blenders before but can’t imagine spending $400 on a blender, I get it. I had the same thoughts and hesitations.

If you already have a $20 blender and don’t really use it very often, it’s hard to imagine needing an expensive super blender. BUT… let me tell you that I love mine and use it all the time. It does things that a $20 blender just can’t do. I make smoothie bowls all the time and I also make healthy nutella (it’s worth the cost just for that recipe alone), peanut butter, toasted coconut butter spread (which is great for toasted coconut butter candy– a great kid-friendly recipe!) and I am starting to use it for soups. And it self cleans! Definitely worth the investment.

  • slivered almonds
  • chopped hazelnuts
  • sliced banana
  • chia seeds
  • flax seeds
  • sunflower seeds
  • pumpkin seeds
  • crumbled up muffin
  • brownie bits (!!)
