Easy 3 Ingredient Raspberry Vinaigrette

This easy raspberry vinaigrette is going to be your new favourite salad dressing! It is a simple yummy dressing that can be as sweet or as tangy as you like and comes together in minutes in the blender or food processor.

Make this raspberry vinaigrette in the summer with fresh raspberries or any time of year using frozen raspberries. Adjust the sweetener to taste, as frozen raspberries aren’t always as sweet as the fresh ones.

Only 3 Simple Ingredients

This recipe comes together quickly because it is only 3 simple ingredients! Raspberries (either fresh or frozen), a mild tasting vinegar (see discussion below) and a hint of sugar or sweetener. Adjust to taste since raspberries can vary on their sweetness depending on time of year. You don’t want this vinaigrette to be too sweet but you also don’t want it to be mouth puckering either.

I don’t think this raspberry vinaigrette needs any oil as it is a nice, light, refreshing dressing, but if you like you can also add a couple tablespoons of oil to this vinaigrette (see discussion below).

Which Vinegars Work Best in Raspberry Vinaigrette

I use white balsamic vinegar in this recipe, which is delicious. It is a milder, less sweet and less syrupy version of regular balsamic vinegar that makes for a softer flavour in your vinaigrette. If you see it in the grocery store, pick some up and try it! If you don’t have white balsamic vinegar, you can obviously use regular balsamic vinegar or apple cider vinegar or even just lemon juice.

Which Oils Work Best in Raspberry Vinaigrette

I don’t always use oil in this recipe, since it’s such a light tasting salad dressing, it doesn’t really need it. But if you think it needs a little oil, I would recommend something lighter tasting than extra virgin olive oil. Try light olive oil, peanut oil, or macadamia nut oil. Sometimes I use melted refined coconut oil and serve this dressing warm. (Refined coconut oil is flavourless compared to virgin coconut oil, which smells and tastes like coconut.)
